Grilled Pesto Shrimp Skewers Recipe

1. Preheat Grill 

Preheat your grill to medium-high heat. This allows for even cooking and a nice char on the shrimp.

2. Marinate Shrimp 

In a bowl, mix together the prepared pesto sauce and olive oil. Add the peeled and deveined shrimp to the bowl, tossing to coat them evenly in the mixture. Allow the shrimp to marinate for about 15-20 minutes in the refrigerator.

3. Prepare Skewers 

While the shrimp is marinating, soak the wooden skewers in water for at least 30 minutes. This prevents them from burning on the grill. Once soaked, thread the marinated shrimp onto the skewers, leaving a little space between each shrimp.

4. Season  

Before grilling, season the shrimp skewers with a sprinkle of salt and pepper to taste. This enhances the flavor of the shrimp and balances the pesto's richness.

5. Grill 

Place the seasoned shrimp skewers on the preheated grill. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Be careful not to overcook them, as shrimp can become tough if cooked for too long.

6. Baste with Marinade  

While grilling, you can brush the shrimp skewers with any remaining marinade for extra flavor and moisture. This step adds a nice caramelization to the shrimp.

7. Check for Doneness 

Ensure that the shrimp are thoroughly cooked by checking that they have turned opaque throughout. You can also gently press on the shrimp; they should feel firm to the touch when cooked.

8. Serve and enjoy 

Once the shrimp skewers are cooked through, remove them from the grill and transfer them to a serving platter. Serve immediately, garnished with fresh herbs or a squeeze of lemon if desired. These skewers make a delicious appetizer or main dish served with a side of rice, salad, or grilled vegetables.
